Ingredients
  

Vegetables
  • 1 red capsicum (bell pepper)
  • 1 green capsicum (bell pepper)
  • 1 tomato
  • 2 Carisma potatoes any potato for roasting is fine
Filling
  • 5 tbsp medium grain white rice
  • 1 brown onion
  • insides of capsicum, tomato and potato
  • 1 tbsp passata
  • 1/4 cup diced tomatoes
  • 2 tbsp olive oil
  • 1 tbsp fresh dill
  • 1 tbsp fresh parsley
  • 1/4 cup water
  • 1 tbsp salt
  • black pepper to taste
Tray
  • 2 tbsp olive oil
  • water to fill halfway up the tray
  • extra olive oil for drizzling

Method
 

  1. Cut the tops off the capsicum and tomato, then scoop out the insides. Keep the flesh and finely chop it.
  2. Finely chop the onion.
  3. Heat 2 tablespoons of olive oil in a pan over medium heat. Add the onion and cook until soft.
  4. Add the chopped vegetable flesh, passata and diced tomatoes. Cook for a few minutes until softened.
  5. Stir in the rice, dill, parsley, salt and pepper. Add the water. Cook for 1–2 minutes to absorb flavour.
  6. Fill each vegetable about ¾ full with the rice mixture (do not overfill as the rice expands).
  7. Place the stuffed vegetables and potatoes into a small baking dish.
  8. Pour over 2 tbps olive oil
  9. Pour water into the tray. The amount will vary based on the tray you're using but you want to aim to fill the tray close to halfway up the vegetables
  10. Drizzle extra olive oil over the top.
  11. Bake at 180°C (fan-forced) for approximately 1.5 hours, until vegetables are soft and slightly caramelised.

Use 1 tablespoon of rice per vegetable as a guide. This prevents overfilling and ensures the rice cooks properly without becoming dense or undercooked.
