These homemade bread rolls are based on my Yiayia Anna’s traditional Greek village bread recipe, shaped into rustic bakery-style rolls with a soft fluffy centre and lightly chewy crust.

They’re not brioche buns, overly crusty artisan rolls or soft pull-apart dinner rolls. Instead, they’re the kind of traditional bread rolls you’d find sitting in the window of an old-school bakery: simple, hearty and perfect for everything from sandwiches to soups.

Growing up, this was often how Yiayia Anna made her bread when she wanted something easier to serve at the table or quicker to grab throughout the day. Using the same dough as her traditional Greek village bread, she would divide the mixture into rolls instead of baking one large loaf.

The result is something beautifully simple. A golden crust with just enough bite, a soft airy middle and that unmistakable homemade bread flavour that only comes from fresh bread straight out of the oven.

Like many traditional Greek recipes, the ingredients are incredibly basic: flour, yeast, water, olive oil, salt and sugar. No complicated techniques, fancy mixers or unnecessary ingredients. Just proper homemade bread rolls made the traditional way.

These rustic bread rolls are perfect served warm with butter, alongside soups, used for sandwiches or simply dipped into olive oil with feta and olives.

The Bread Roll Version of Yiayia Anna’s Village Bread

Instead of shaping one large loaf, the dough is divided into smaller individual rolls which bake slightly softer in the centre while still keeping that rustic bakery-style exterior.

I honestly make these just as often as the loaf itself because they’re practical, freezer-friendly and easier to use throughout the week.

Tips for Making the Best Homemade Bread Rolls

Don’t Add Too Much Flour

The dough should feel soft and slightly tacky without being overly sticky. Adding too much flour can make the rolls dense and dry.

Traditional village-style bread dough is meant to stay relatively soft.

Allow Enough Rising Time

Bread dough rises differently depending on the weather and room temperature.

If your dough hasn’t doubled in size yet, simply give it more time. A slightly warmer spot in the kitchen can help speed things up naturally.

For a Softer Centre

Avoid overbaking the rolls. Once the tops are golden and the bottoms sound hollow when tapped, they’re ready.

This keeps the inside soft while still developing that beautiful bakery-style crust.

Let Them Cool Slightly Before Serving

Fresh bread rolls smell incredible straight out of the oven, but allowing them to cool slightly helps the texture settle properly inside.

One of my favourite things about old family recipes is seeing them exactly as they were originally written down.

Yiayia Anna’s recipes were never filled with precise measurements or long instructions. Like most Greek yiayias, she simply knew how the dough should look and feel.

Her handwritten bread recipe was tucked inside my blue recipe book, written partly in Greek and partly in phonetic English. Deciphering it honestly felt like solving a puzzle, but that’s part of what makes these recipes so special.

Homemade Bread Rolls (Greek Village-Style)

Ingredients
  

  • 2 tsp dry yeast
  • 1 kg plain flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1/4 cup olive oil
  • water as required

Method
 

Preparing the yeast
  1. In a small bowl, combine the yeast, sugar, and 3 tablespoons of lukewarm water. Stir well and let it sit for 10 minutes.
Dough Preparation
  1. In a large bowl, mix together the flour, salt, and oil.
  2. Pour the yeast mixture into the large bowl and combine with the dry ingredients.
  3. Gradually add lukewarm water until a dough forms. Start with 1 cup of water, adding more if needed. The dough should not be too sticky to touch; it should allow for easy kneading without excessive sticking. A slight stickiness is acceptable, but it should not hinder the kneading process.
Kneading and Resting
  1. Knead the dough for about 10 minutes until smooth, then shape it into a ball.
  2. Lightly oil another bowl and place the dough in it. Cover the bowl with plastic wrap and let the dough rest for 1.5 hours, allowing it to double in size.
Shaping and Second Resting
  1. Once the dough has doubled in size, punch it down and cut the dough into 8 equal parts
  2. Roll the parts into 8 round rolls. Rest it on your baking tray and cover them again and allow to rest for another 40 minutes
Baking
  1. Preheat the oven to 200°C.
  2. Bake the rolls for 20 minutes, or until it achieves a golden colour and feels light when lifted. Tap the base of the bread; it should sound hollow when it's ready.
  3. Allow the bread to cool for 10 minutes before eating and serving.

Can You Freeze Homemade Bread Rolls?

Yes. Once cooled completely, store the bread rolls in an airtight container or freezer bag and freeze for up to three months.

To serve, simply allow them to thaw naturally or warm them slightly in the oven.

How to Store Homemade Bread Rolls

These rolls are best enjoyed fresh within the first two days.

Store them:

-in a bread box
-paper bag
-or loosely wrapped in a tea towel

By the third day, they become slightly firmer which makes them perfect for toasted sandwiches.
