Custard Filled Donuts (Easy, Soft & Creamy – Yiayia’s Recipe)

If you’re looking for custard filled donuts that are soft, fluffy and actually easy to make, this is the recipe I grew up with.

These are based on my yiayia Anna’s pitoulitses: a simple, versatile dough she used for both savoury and sweet recipes. Traditionally, they were made plain or filled with cheese, but this version leans into the sweet side, filled with thick, creamy custard.  View the original savoury version here.

The dough is soft and slightly chewy, with a golden crust once fried, and the custard is rich enough to hold its shape without leaking.

Dust them in icing sugar for a classic finish or roll in sugar for a bit of crunch; either way, they don’t last long.

Tips for the Best Custard Filled Donuts

Make the Custard Thicker Than Usual

It needs to hold its shape inside the donut; thicker than a typical vanilla slice.

Chill the Custard Before Filling

Warm custard = leaks. Always let it cool fully.

Don’t Overcrowd the Oil

Fry in batches to keep the temperature stable.

Test One Donut First

Cut one open to check it’s cooked through before continuing.

Let Them Rest Slightly Before Filling

This helps prevent the custard from melting inside.

2 Custard Donuts with Powdered Sugar

Custard Filled Donuts

These custard filled donuts are soft, fluffy and filled with a thick vanilla custard. Based on a traditional Greek dough (pitoulitses), they’re easy to make and perfect for dessert or entertaining.

Ingredients
  

  • For the Dough
  • 150 ml full-fat milk
  • 100 ml water
  • 1 large egg + 1 egg yolk lightly beaten
  • 1 tsp lemon juice
  • 2 tsp dried yeast
  • 1 tbsp caster sugar instead of tsipouro
  • ½ tsp fine salt
  • 350 350-400 g plain all-purpose flour: start with 350 g and add up to 400 g if the dough is still too sticky
  • 250 ml full-cream milk
For the Custard
  • 65 g caster sugar
  • 3 egg yolks
  • ½ vanilla bean or ½ tsp vanilla paste
  • 20 g plain all-purpose flour
  • 15 g cornflour cornstarch

Method
 

Prepare the dough
  1. In a large bowl, mix milk, water, eggs, yeast, sugar, and lemon juice. Gradually add plain flour then salt, mixing with your hand until the dough forms a ball: soft and slightly sticky but not wet. Cover and rest for 1.5 hours.
Shape & fry
  1. Divide the dough into 8 equal pieces. An easy way is to cut the dough ball in half, roll each half into a ball, then cut each ball in half again. Continue halving until you have 8–10 pieces. Roll each piece into a smooth ball and gently flatten it. Cover and let them rise for 30 minutes.
Make the custard
  1. Heat the milk and vanilla until steaming.
  2. Whisk yolks, sugar, plain flour and cornflour until pale in a separate bowl.
  3. Slowly whisk in hot milk to the bowl and return it all to the pot and cook over medium heat until thick and bubbling.
  4. Cover with cling film touching the surface and chill until completely cold.
Fill & finish:
  1. Use a piping bag with a small nozzle to fill each donut with chilled custard. Dust generously with icing sugar (or roll in granulated sugar).

Variations
