Quick and Easy Hummus Dip

Ingredients
  

  • 2 cans chickpeas drained and rinsed
  • 120 ml lemon juice approx. 2 large lemons
  • 150 ml tahini
  • 2 small garlic cloves minced
  • 60 ml olive oil + more for drizzling
  • 1 tsp ground cumin
  • 70 ml cold water
  • salt to taste
  • dash of sweet paprika for serving

Method
 

  1. In a food processor, blend tahini and lemon juice for 1 minute. Scrape down the sides of the bowl, then blend for another 30 seconds.
  2. Add olive oil, minced garlic, cumin, and 1 tsp of salt to the food processor. Blend for 30 seconds.
  3. Add half of the chickpeas to the food processor and blend for 1 minute. Scrape down the sides and continue blending for 1-2 minutes.
  4. Mix in the water until well combined.
  5. Transfer the mixture to a serving bowl and refrigerate for at least two hours. Cover with plastic wrap to prevent a crust from forming on the top.
  6. Before serving, use the back of a spoon to create a spiral indent on the surface. Drizzle oil into the indents and sprinkle with paprika. Enjoy!
