Enjoy this Peppers and Feta Dip with Homemade Bread or Straight from the Pan!

 

 

Hot peppers with feta

Peppers & Feta Dip

Ingredients
  

  • 4 red bullhorn peppers
  • 2 green bullhorn peppers
  • 1 yellow bullhorn peppers
  • 2 medium tomatoes
  • 250 g dodoni feta
  • 2 tbsp olive oil
  • 2 tsp chilli adjust to your liking
  • 1 tsp black pepper

Method
 

  1. Cut your vegetables in chunks. They don't have to be equal in size; in fact the more abstract every piece is, the better.
  2. Add your olive oil to a pan on medium heat and add all your peppers into the pan.
  3. Continue to stir with a wooden spoon until all your vegetables have softened completely. You want them to be extremely limp. Add more olive oil if you need to add more moisture to the pan. We don’t want to burn the vegetables.
  4. Add your tomatoes and continue to stir until most of the liquid is absorbed.
  5. Turn off the heat and crumble the feta into the pan and stir. The feta will begin to melt.
  6. Add your chilli and black pepper and stir through.
  7. Serve immediately.

Notes

If you can’t find the bullhorn peppers, you can use capsicums/bell peppers but I recommend using half the qty to bullhorn peppers as capsicums can be much larger.
