Yiayia Anna’s Classic Kourabiedes Recipe

Kourabiedes with Greek Coffee on Plate

Classic Greek Christmas Kourabiedes

Ingredients
  

  • 1 Cup Icing Sugar
  • 10 g Vanilla Sugar
  • 250 g Self Raising Flour Up to 300g of flour
  • 1/2 Cup Roasted Almonds 1/2 cup to 1/3 cup
  • 1 Tsp Baking Powder
  • 125 g Unsalted Butter
  • 1/4 Cup Whiskey
  • 1/4 Cup Lemon Juice
  • Pinch of Salt
  • Plain Flour to dust your work bench
  • Icing Sugar reserve extra for dusting your cookies

Method
 

Preheat the Oven
  1. Preheat your oven to 160°C (320°F). Line a baking tray with baking paper.
Cream the Butter & Sugar
  1. In a large mixing bowl, beat the softened butter, icing sugar, and vanilla sugar together until smooth and creamy.
Add Liquids
  1. Mix in the whiskey and lemon juice until well combined.
Fold in Dry Ingredients
  1. Sift the baking powder into the mixture.
  2. Gradually add the self-raising flour, 1/2 cup at a time, mixing gently until a soft dough forms. Be careful not to overwork the dough.
  3. Add the chopped almonds and mix them into the dough.
Shape the Kourabiedes
  1. Pinch off a small amount of dough and roll it into a small ball or into a crescent shape. Place onto the prepared baking tray.
Bake
  1. Bake the kourabiedes in the preheated oven for 20-25 minutes, or until they are lightly golden.
Cool & Dust
  1. Remove from the oven and let them cool on the tray for a few minutes. While still warm, dust the kourabiedes with icing sugar.
