Filo pastry should come out of the oven golden, crisp and evenly coloured.

But sometimes, instead of that rich golden finish, it stays pale, patchy or just doesn’t brown properly.

The good news is, this usually comes down to a few simple things that are easy to fix once you know what to look for.

Why is my filo pastry not browning?

1. Not enough oil or butter

Filo pastry needs fat to brown properly.

Without enough oil or butter brushed between the layers and on top, it won’t develop that golden colour.

👉 Fix: Be generous when brushing each layer and especially the top.

2. The oven temperature is too low

If the oven isn’t hot enough, the pastry will dry out slowly instead of browning.

👉 Fix:
Bake in a fully preheated oven at around 180–190°C.

3. The top layer is too dry

If the top layer hasn’t been brushed properly, it won’t colour evenly.

👉 Fix:
Make sure the top is well coated before baking.

4. It’s covered while baking

Covering filo traps steam, which prevents browning.

👉 Fix: Bake uncovered so the heat can crisp and colour the pastry.

5. Uneven heat in the oven

Sometimes the oven itself is the issue.

👉 Fix:

– Rotate your tray halfway through baking
– Use the middle rack

6. It’s actually drying out instead of browning

Sometimes filo looks pale because it’s drying rather than browning.

How to get filo pastry golden and crispy

– Brush each layer with oil or butter
– Make sure the top is well coated
– Bake in a hot, preheated oven
– Don’t cover during baking
– Rotate if needed

What properly baked filo should look like

When filo pastry is done right, it should be:

– Golden brown on top
– Even in colour
– Crisp and flaky
