If there’s one dish that embodies comfort, tradition, and sheer deliciousness, it’s Yiayia’s Chicken and Rice. A staple in many Greek households, this humble dish pairs tender, shredded chicken with perfectly cooked, buttery rice infused with flavours of golden onions and savoury chicken broth. Simple? Yes. Boring? Absolutely not.
In this post, I’ll share the step-by-step process for creating this timeless dish, along with tips, tricks, and why this recipe holds a special place in my heart (and stomach).

Chicken & Rice might sound basic, but its versatility and ability to complement any meal make it a winner. Whether paired with a hearty salad, roasted vegetables, or even a dollop of tzatziki, this dish can shine on its own or play a supporting role. Yiayia’s version, however, is elevated with buttery sautéed onions and a secret weapon: Vegeta seasoning.
Why Vegeta
This seasoning is a pantry MVP in many households, adding an umami kick that ties the dish together. If you don’t have Vegeta, a good quality chicken stock powder will do the trick but trust me, Vegeta is worth it. It can be found at any local supermarket – Coles, Woolies or a European deli.
Tips for the Perfect Chicken & Rice
- Don’t Skip Washing the Rice: It’s a game-changer for texture. To stop small grains from slipping down your kitchen sink drain, I highly recommend using a specialized OXO Rice Washing Colander. It rinses away excess starch perfectly so your rice turns out light and fluffy, never sticky
- Taste as You Go: Adjust seasoning to your preference.
- Serve with a Side: Tzatziki, a Greek Maroulosalata, or an easy Mediterranean Salad pair perfectly with this dish.

Yiayia's Buttery Chicken and Rice
Method
- Bring a pot of salted water with a pinch of pepper to a boil. Add 5 drumsticks and simmer for 45 minutes, or until the chicken is tender.
- While the chicken cooks, wash the rice thoroughly until the water runs clear.
- In a heavy-duty, oven-safe pan (like a Ceramic Casserole Dish) melt your butter with a splash of oil. Add the diced brown onion and sauté until softened and beautifully golden."
- Stir the washed rice into the pan, coating it well with the buttery onion mixture.
- Pour in 4 cups of the chicken broth from the pot. Mix well, then sprinkle Vegeta seasoning evenly over the top.
- Bake uncovered in a preheated oven at 220°C (fan-forced) for 30 minutes. Baker's Note: Because the pan handles get exceptionally hot at this temperature, make sure to use heavy-duty Silicone Oven Mitts to remove the dish safely from the ove
- While the rice cooks, shred the chicken, discarding the bones.
- Once the rice is done, fluff it with a fork and stir in the shredded chicken.
- Serve as is or with crumbled feta on top. Enjoy!
