This chicken yoghurt marinade is a timeless recipe handed down from my Pappou Lazo; a simple yet flavour-packed blend that transforms everyday chicken into something extraordinary. With creamy yoghurt, fresh lemon, garlic and herbs, this marinade makes the juiciest chicken for gyros or BBQ.

Why this chicken yoghurt marinade works

The key is Greek natural yoghurt. It tenderises the chicken thighs and gives them a rich, velvety coating. The acidity of the lemon cuts through the creaminess and the garlic, paprika, cumin and oregano bring warmth, depth and classic Greek character.

What You Need To Make This Chicken Yoghurt Marinade

Ingredients:

  • 1 kg chicken thighs – thighs hold their moisture and flavour beautifully compared to breasts.
  • ½ cup Greek natural yoghurt – the creamy base for our chicken yoghurt marinade.
  • ¼ cup olive oil – adds richness and helps the marinade cling.
  • Zest of 1 lemon + juice of 1 lemon – for citrus freshness and tenderising power.
  • 4 garlic cloves, minced – bold flavour.
  • 2 tsp salt – to bring all the ingredients together.
  • 1 tsp sweet paprika – subtle sweetness and beautiful colour.
  • 1 tsp cumin – aromatic warmth.
  • 1 tsp dried oregano – the classic Greek touch.
  • 1 tsp pepper – for a gentle kick.

Instructions:

  1. In a bowl, combine the yoghurt, olive oil, lemon zest + juice, garlic, salt, paprika, cumin, oregano and pepper until everything is well-blended.
  2. Rub the marinade over the chicken thighs until they’re fully coated in this luscious chicken yoghurt marinade.
  3. Cover and refrigerate the chicken for at least 2 hours, but ideally overnight for maximum flavour absorption.
  4. Pre-heat a grill or heavy frying pan. Cook the chicken until golden brown on the outside and cooked through (internal temperature ~75°C or 165°F if using a thermometer).
  5. Let the chicken rest for a few minutes, then slice it for perfect gyros or serve whole.

Serving suggestion

For the classic gyro experience, warm up some flatbreads, load them with sliced chicken (coated with our chicken yoghurt marinade), spoon over homemade tzatziki, add tomato, red onion and fresh greens. Ingredients
  

  • 1 kg chicken thighs
  • 1/2 cup Greek natural yoghurt
  • 1/4 cup olive oil
  • Zest of 1 lemon and juice from 1 lemon
  • 4 garlic cloves minced
  • 2 tsp salt
  • 1 tsp sweet paprika
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1 tsp pepper

Method
 

  1. In a large bowl, whisk together the Greek yoghurt, olive oil, lemon zest, lemon juice, garlic, salt, paprika, cumin, oregano and black pepper until smooth.
  2. Add the chicken thighs and turn to coat each piece evenly.
  3. Cover and refrigerate for at least 2 hours, although overnight will give the best flavour and tenderness.
  4. Remove the chicken from the fridge 20–30 minutes before cooking.
  5. Cook over medium-high heat until nicely browned and the internal temperature reaches 75°C (165°F).
  6. Rest for 5 minutes before serving.
